So I am struggling keep the final product from becoming a little sticky, and losing moisture. I'm in TX so at all times things are in a state of melting. I'm trying to come up with a near perfect, shelf stable, chewy gummy infused with extracts from functional mushrooms (no not those kind of mushrooms😅..... but yeah also those kind) I've given gelatin a few looks, and I've got something close but it still doesn't handle heat well. Pectin is tricky because the active compounds start to break down at 170° - and to keep the moisture content down & potency up, I've got to use the extract for every bit of moisture involved. But if I'm taking it to 220° it's coming out greatly reduced in potency. I've tried a combination, and it came out pretty good, it is getting a little floppy once the temp starts to exceed room temp. And my more firm, gelatin version stays stiff but develops a thin, sticky surface that wants to cling to everything, sugar/citric acid coating just kind of becomes a sticky sugar/citric acid coating 🙄. What might you suggest? I'm not even what you would consider an amateur chef or nutritional scientist, but I get obsessive when I'm on a subject & perfect things quickly (so while certainly a layman, I'm not restarted & can handle looking up definitions - side note: the practice of dumbing things down is a plague on the intellect of this country)

I love how all these comments are just boiling this revelation down to "putting sails on a ship? what a marvel idea!" despite the insane level of engineering know-how required to make it work for a modern freight ship.

It still has a decent funnel. No technical data on sails, how much power do they give etc. Seems to be just another advertisement with no real tech behind.

This looks terrible. Those are some small sails and they don't work against the wind. Using wind turbines or even just using mechanical energy powered from the wind to turn propellers would make a lot more sense. Those sails look incredibly inefficient.
